Taco Bowl Recipe
This summer, I've been trying to eat soy-free, dairy-free, and gluten-free. I've also cut out a lot of red meat. For more info on how I am eating this summer, check out my post here. Today, I wanted to share one of my favorite soy-, dairy-, gluten-, and red-meat free recipes that still tastes AMAZING. I've included how I make it, along with some options for you to customize it to make it your own.
I love Mexican food, and Chipotle's burrito bowl inspired this recipe: Taco "Bowls." I make two servings, one for dinner and another for lunch the next day.
Taco Bowls
Servings: 2
Ingredients:
- 1/2 lb. ground turkey
- 1 package Taco seasoning (make sure to look at the ingredients to confirm that there is no whey, soy, or wheat)
- 1/2 cup uncooked brown rice (makes two servings when cooked)
- 1 cup water
- 1 package fresh shredded lettuce
- 1 spoonful of salsa
Instructions
- Begin by browning the ground turkey in a skillet on medium high.
- Combine 1/2 cup uncooked brown rice and 1 cup water in a pot on high heat. Once the water starts to boil, reduce to low heat, cover, and let simmer for about 12 minutes or until the water is absorbed.
- When the meat is sufficiently browned, follow the instructions on the taco seasoning for adding in water and seasoning.
- Once rice is ready, fluff it with a fork.
- Remove both cooked, seasoned meat and cooked rice. Mix one half of the meat and one half of the rice into a bowl. Top this bowl with lettuce and a scoop of salsa.
- Mix the other halves into a separate bowl and save for lunch tomorrow.
- Enjoy!
Some variations you can do to make your own delicious taco bowl:
- Use shredded chicken instead of ground turkey
- Substitute white rice for brown
- Use riced cauliflower instead of rice
- Top with chopped tomatoes
- Top with frozen corn (cooked to package instructions)
- Top with cilantro and/or limes
- Top with homemade pico de gallo or guacamole
- Add cooked black beans (or substitute beans for the meat to make this vegetarian!)
